Rich Chocolate Fudge Pie (Dairy Free, Gluten Free, Wheat Free)

Here we sit in the last stretch of December/the holiday season. If you’re anything like me, this time of year is bittersweet (no pun intended) because you LOVE the holidays, but also kinda hate that it means another year has come and gone. It also means that it is officially “baking season” and you are bound to undo all the hard-work, dedication and discipline you have accomplished and somehow stuck with all (ehhh, majority) of the year…because you know…#health.
Have no fear, for today, I bring you this amazing, easy, extremely delicious and semi-healthy Rich Chocolate Fudge Pie! This pie is dairy-free, gluten-free, wheat-free and besides the Vanilla Wafers and chocolate chips, the only sugar comes from maple syrup. I know, it sounds impossible, some would dare say it is a Christmas miracle.
Whether you make this for a holiday party, a family/friend get-together, or for yourself possibly as a reward for getting through the family get-togethers, it is sure to be a hit and will disappear faster than your money did during your holiday shopping.
Now depending on your own personal preferences and if you have any food allergies you can tailor this recipe to suit your needs. I personally have Celiac Disease and I’m borderline lactose intolerant, therefore found Kinnikinnick Vanilla Wafers and Enjoy Life chocolate morsels to be perfect! If you prefer to have a “gluten-full” version, or use a pre-made crust, you go right ahead! So lets get on with the recipe!

Rich Chocolate Fudge Pie

What you’ll need:

2 & 1/2 to 3 cups of crushed Vanilla Wafers
4 tablespoons of raw cacao powder (or just cocoa powder)
4 tablespoons of coconut oil (melted)
3 tablespoons of maple syrup
1/4 teaspoon of salt

Pie Filling:
8oz bittersweet or dark chocolate
2 eggs
1 (13.5) can of coconut milk (set 2 tablespoons aside for chocolate glaze)
1 & 1/2 teaspoons of vanilla extract
1/4 teaspoon of salt

2 tablespoons of coconut milk (that was previously set aside)
1oz of bittersweet or dark chocolate
3 tablespoons of cocoa powder
1 teaspoon maple syrup
1 tablespoon of water

Strawberries, other fruit, candy or even sprinkles (all are optional…but let’s be real, the strawberries are necessary. Strawberries+chocolate=love)


1. Preheat oven to 350 degrees
2. Take Vanilla Wafers, place in secure ziplock bag and smash to medium-to-fine crumbs.
3. In a medium bowl, stir together wafer crumbs, cacao/cocoa powder, maple syrup, coconut oil and salt until well combined and consistency of wet sand. May need to add more coconut oil until right consistency is achieved.
4. In a 9-inch pie pan (or a springform pan) press crust mixture into bottom and up sides of pan.
5. Bake crust for 10-15min or until firm and darker in color. Remove from oven and allow to cool.
6. For filling, heat coconut milk in sauce pan or pot and bring to a simmer. Remove from heat, add chocolate and stir until smooth and chocolate is fully incorporated. Let cool for roughly 10 minutes.
7. In a small bowl whisk together vanilla, eggs and salt. Add SLOWLY to cooled chocolate, stirring quickly until fully combined and smooth.
**If you don’t do this step slowly you risk having the eggs start to scramble…and nothing is worse than chocolate scrambled eggs….I’m unfortunately speaking from previous experience *gags**
8. Pour filling into crust, return to oven and bake for 25-30 minutes. Center will still be wobbly, but edges should look firm. Remove from oven and allow to cool 30 minutes and refrigerate an additional 30 minutes.
9. For glaze, in saucepan or microwave heat coconut milk, maple syrup and water. Add chocolate and cocoa powder, stirring until melted and smooth.
10. Pour glaze over middle of pie and allow it to cascade over (may need to use a spatula or knife to help it along) Allow glaze to set and garnish.

Serves 12-14 slices. I recommend cutting the pie into fairly thin slices, because y’all this thing is RICH –thus the title.

Now like I said before, the garnish is totally up to you and completely optional, but I highly recommend strawberries either on top or serve along side it. Am I slightly bias about strawberries because my family grows them?…Yes. But they truly are a borderline necessary addition to this recipe, because it not only cuts the richness just a tad, but strawberries and chocolate are a dynamic duo that can’t be beat —and if they are Parke Family Hydro Farms strawberries your pie is guaranteed to be a success 😉
